“..circulating mash is damaging the structure of mash…”


This argument has been brought forward from two German competitors, who obviously don’t have enough technical knowledge about the source of the argument.
Fact is, that every centrifugal pump requires a proper design in order to avoid cavitation, too high flow rates at certain areas inside the pump, gasket ring flipping and finally to meet the hygienic requirements (CIP). All these conditions have to work throughout a relatively high range of temperatures, practically from 35°C up to boiling temperatures. It is relatively easy to understand, that a normal stainless steel pump from a home depot store will not meet these requirements.
The external mash and wort heater requires a perfect working pump in order to avoid these negative influences. The development of the Salm external mash and wort heater (Patent) required also the adequate design of the mash and wort pump, of the proper dimensioning of the tube system and the entire piping setup.

The hydro dynamic knows two different types of flow conditions, the turbulent flow and the laminar flow. The turbulent flow creates it´s maximum speed in the center of the tubes square, while the flow speed goes down to zero at the inner wall of the tube. This flow condition has to be avoided throughout the entire temperature and product range. The laminar flow condition however enables almost identical flow speeds at the entire tube´s square.
 
We leave the experimenting to other companies, SALM however uses laminar flow conditions since the early beginning of the development and these flow conditions are avoiding any kind of mechanical destruction of the mash. If this argument would have had any kind of truth, why more than one hundred plants around the world are not facing problems with this technology ?
